First, put the small lid on, turn the mold upside down and fill it up to the groove; close with the large lid and place in the refrigerator, keeping it upside down. When the pudding is ready, remove it from the refrigerator, remove the large lid and invert the mold onto a saucer : by removing the small lid, the pudding will detach from the mold without leaving any residue.
