The new Microplane blade is inspired by the classic carrot salad so beloved by the French, known as Carottes râpées. The secret to this traditional dish is in the very thin strips, slightly different from the classic julienne strips.

Thanks to the fine julienne blade, the flavor of all grated ingredients is enhanced, whether carrots or other. The difference is immediately evident: the strips of carrots, celery, courgettes, apples, pears, potatoes, beets, radicchio or cucumbers are slightly wider but finer and thinner than those obtained with the classic julienne mandolin and at the same time less wide than those obtained with the ultra-thick blade grater.
